Dianne, I grew up in the south and love green beans cooked with red potatoes. Of course, potatoes are not low-carb, but we didn't care about that back then.

I still love lima beans, pinto beans, and black eyed peas. We used to have collard greens served at school lunches. I remember we doused them with vinegar. I haven't had any in a long time. I'm making myself homesick.

Terri - you should make yourself some collard greens!

I had my EAS shake in the morning, and am now having Very Veggie with cheese, olives, and ranch. What are you guys having?

We grow collard greens and love to have them with a bit of garlic, shallots, and bacon. Top it off with Balsamic Vinegar. So good!

Lisa, I'm counting carbs and I'm new to this. My husband and I have been doing Atkins. Atkins uses the net carb-sugar alcohol deal. Should I use this method going forward or stick just to carbs once we are on our own?

I love greens of any variety. My mother was from the south, and I also love all kinds of beans and peas. As I've grown older, I've learned to eat them without the obligatory pound of bacon thrown in for "seasoning."

But don't you miss that good ole bacon grease? Did your Mom keep a grease can in the cabinet under the sink?

I am trying to get my husband to eat greens. He is still a little hesitant.

I still keep a little bacon grease in a jar in the fridge. I dole it out a teaspoon at a time.

My husband loves his greens! He'd never had them before we got married.
