Having my salad this very minute with cheddar cheese, olives, pine nuts, and Italian dressing. I finished off the dressing. Did you guys have your salad yet today?

I sure did. My fave! Salmon, corn, beets, cucumber and red onions with romaine lettuce and white balsamic vinaigrette!

I'm finally back on a schedule. I had my morning shake earlier, and now I'm having a very veggie salad with cheese, olives, and ranch dressing - plus the rest of my Mumm bubbly.

Delicious!

Have you had a salad yet today?

Glad to hear you are getting better...I think it's the Mumm bubbly! smile

I had my salad for lunch today. Crunchy romaine lettuce, tuna, cucumbers, cashew nuts and corn with a white balsamic vinaigrette.

Totally delightful...it gave me so much energy!

I made a grape salad for Christmas, using green and red grapes; I now call it my "Christmas Grape Salad," and it will appear in my forthcoming cookbook, Vegan Delicious: Salads and Sides. Here's the recipe and a photo of it:

Ingredients
1 cup red grapes, halved
1 cup green grapes, halved
5 medium radishes, sliced & halved
1 medium cucumber, quartered & sliced
1/2 medium red onion, chopped
1/2 cup celery, chopped
1/4 cup fresh cilantro, rough chopped
1/2 tsp each sea salt & coarse black pepper

Dressing
1/4 cup olive oil
1/4 orange juice
1/4 tsp sea salt
1/2 tsp coarse black pepper
1/2 tsp onion powder
1/2 tsp cumin
1/2 tsp chili powder
1 tbsp Vegenaise (optional)

Instructions
1. Combine grapes, radishes, cucumber, celery, cilantro, and spices in large mixing bowl.
2. Prepare dressing by placing all dressing ingredients in measuring cup and whisking together until well-combined.
3. Pour dressing over grape mixture, stir well, and place in your prettiest serving bowl.

That looks delightful. I love the red and green color theme for Christmas.

I will definitely try this as I love all of the seasonings you added to it, especially the cumin and chili powder...an interesting combination of flavors. Nicely done!
