Your article is a wonderful tribute to her. And, I must tell you that it is vital information. Our own cat who came to us as a stray shows signs of this disease. We wondered why he frequently vomits his food up. We've tried all types, dry, canned, different brands.
The problem is that we have no idea how old he is and he will not go into the car or a carrier as he has been "on his own" for who knows how long. Although he loves to come inside to sleep and get lots of love, he is mainly an outdoor cat.
Now, I believe that he, too, must have renal disease because he shows all of the symptoms you mentioned.
But he still eats so that is one good sign.
