Oh gosh Mona now is that was true I would order 20 buckets at once, or even quicker than that.

Am often in Burgundy and have seen them use the other system "whole bunch fermentation", therefore unfortunately know I must dream on because "whole grape fermentation" is otherwise known as "carbonic maceration" and takes place in the Beaujolais wine region of Burgundy/Rhone.

Although from what I am told they like to be known as "Beaujolais".

Anyhow it makes the wine drinkable quickly, a bit like Germany's Federweiser I suppose, although that is made differently, the season is very short and my goodness is it deceptively strong.

Nevertheless let's hope your brilliant idea will inspire someone to great things..........have heard that bathing in wine in very good for the skin, increases energy and heaven knows what else. Not tried it out so far though.

OK, Francine, I can see that makes sense. I wonder how it affects the flavour. They don't seem to advertise it on the bottle, so I wouldn't know if I'd drunk something produced in this way.

But carbonic maceration does sound like one of the sorts of names these dubious beauty & health people come up with - I guess the idea is to make what is really nothing sound scientific.

Adding a touch of the sinister is that every time Peter tries to say something about carbonic maceration, he's rendered speechless. He has three empty posts on this thread. Slightly worrying, wouldn't you say?

at last. I changed using UBB code to both HTML and UBB and at last it worked.

Repying to Francine - It's Beaujolais when the grapes are grown within the Beaujolais appellation.
