Tonight I cooked brussels sprouts, cauliflower, and green peas together with garlic salt. They were delicious.

Lisa,
I used to HATE brussel sprouts, then I found out that my kids loved them, so I make them now and actually they're not too bad. Love? No, but I can eat them with enjoyment now.

Wow still not back to salads. I wonder if this will be a permanent change. I am just not wanting them. Had soup today. What are you eating?

I love fresh vegetable soup. Potsticker soup is also a favorite. Eggdrop is so low carb, and I just fill it with veggies.

Bob just made me a delicious spinach, cheddar, garlic, and bacon egg-white omelet. Tasty! What low carb items are you having today?

I'm just not hungry - had some hard boiled eggs to get something into me. How are you doing? Anything low carb and tasty?

I am having a wrap. You could use a low-carb tortilla and fill it with salmon salad, fresh spinach leaves, 2/2 avocado sliced, and a drizzle of ranch dressing - about a teaspoon. Easy, yummy, low-carb, and high in good fats.

Here's an easy low carb and low cal main dish.

Stewed Eggplant

Put a couple of tablespoons of olive oil in a pan and heat it. Throw in an eggplant that has been cubed. Stir it around in the oil for a couple of minutes. Then, add a cup of water, bring it to a boil, and cover it. Simmer on medium-high heat until all of the water is absorbed. Remove from heat and stir in 1/2 teaspoon seasoned salt (if desired) and a can of diced tomatoes with onion and garlic. Heat gently for 10 minutes and stir in 2 tablespoons of Parmesan cheese. This is enough for
4-6 side dishes or two main dishes.
