We had the Mini-Pumpkin Soup for dinner last night with toasted cheese on a base of sausage cheese biscuit to hold the toasted cheese. It was a delicious meal.

Well, I finished the Mini-Pumpkin Soup and Sausage Cheese Biscuit snacks for lunch today. It was delicious and satisfying.

Only make this with mini-pumpkins that have not been coated with a shiny coating or decorated with paint. Those things could contaminate the pumpkin.

If you have leftover hubbard squash, or any yellow winter squash, that works, too. Carrots also make a lovely soup.
