My tasty Kolhapuri Mixed Vegetable Curry has its origins dating back to the ancient Maharashtrian city of Kolhapur. Traditionally, this dish is meant to be eaten spicy - but feel free to adjust the spicy heat levels to suit your palate. This dish is a great way to use fresh seasonal vegetables.

Sadhana, this looks great! I love cooking Indian food. My husband and I took a class some years ago. Whenever I am thinking about how to use a little bit of this and a dab of that, Indian food comes to mind. This week I had half of a cauliflower, some onion, garbanzo beans, fresh salsa that needed to be used, and some potatoes. Combined with fresh garlic and ginger, with other spices, it made such a wonderful dish. I served it over rice that was spiced with onion, cumin, bay, cloves and cinnamon sticks. Yum!
