Baccal�, or dried salt-cured cod fish, stewed in a light tomato sauce with potatoes and black olives, is traditionally prepared throughout the South of Italy as part of the Christmas Eve dinner and for the Feast of the Seven Fishes in the U.S.

And it is also a very traditional Christmas Eve dish in Mexico, Cinzia, usually in the form of Bacalao a la Vizcaina and therefore based on a very Spanish recipe. I love salt cod - when it is properly prepared, it is succulent, savoury and truly delicious. I must try your recipe, it sounds so good and easy.
