Sounds yummy. But what is canola oil? Which oil would be a good substitute if this isn't readily available? (It isn't.)
And what is pure vanilla? I can get "vanilla essence" but no way I'd use a tablespoon of it. Why is it omitted from the healthier recipe?
An interesting culinary observation for you . . . Although I'm used to American baking recipes calling for vanilla, I rarely find British ones do.
