I used to go overboard making homemade, multi-course dinners for my family. My son once said that coming home to a nice meal helped fortify the "troops" because he and my husband worked so hard.
But today, I have scaled back considerably mostly because there are lots of demands on my time now with caretaking duties, writing, and working out of the house. We've resorted to lots of fast food with occasional homemade meals. I need to turn this around.
Thanks for the reminder that I can still cook simple but satisfying dinners with little effort.
