Ohhhh, myyyy gosh! Granpappy done got 12 5 gallon buckets on the back porch, each with a big turkey soaking in brine. I reminded him that they should soak for at least 6 hours and no more than 12 hours -- NOT 24 HOURS, as I originally posted, shame on me. After 24 hours of being in the brine, I think a turkey would either be very salty .... or mummified!!!! So, I hope we have a lot of visitors to come to the Front Porch and try Granpappy's turkey. Also, there will be tons of turkey sandwiches on order for tomorrow, will need help fixing those.  Debbieeeeeeee!

I like the dark meat, too, Debbie. It is good on sandwiches and in soup. I did not cook dinner here, but, brought two carcasses home with drumsticks and wings attached to make soup with. With mixed vegetables, turkey gravy mix, chopped onion and celery, it makes a really good soup, almost a stew if I get carried away with the gravy, which I often do.  If you have 'Mrs. Cubbison's Stuffing Mix' back there, it is worth a try. I like it very much. I get the herb flavor, not the cornbread one. I add a lot of sauteed onions and celery to it, chicken or turkey stock, and bake it till very hot and slightly crispy on top. Very, very tasty! hmmmm .... now I am hungry for a turkey sandwich again. I am going to get myself a turkey next week to roast just for sandwiches and soup.
