The Aztecs called it molli or mulli. In their Nhuatl language, it simply meant sauce or mixture. For the Spaniards, who encountered it in its countless versions in the cooking pots of the great market place of Tenochtitln, it became mole, the name which it still bears today. Like most Mexican cooking, a traditional mole is not fast food by any stretch of the imagination but it is "la cocina mexicana" at its most fascinating and historical.
