The Aztecs called it �molli� or �mulli�. In their N�huatl language, it simply meant sauce or mixture. For the Spaniards, who encountered it in its countless versions in the cooking pots of the great market place of Tenochtitl�n, it became �mole�, the name which it still bears today. Like most Mexican cooking, a traditional mole is not fast food by any stretch of the imagination but it is "la cocina mexicana" at its most fascinating and historical.
