To answer your lamb question...
When I was in Morocco on a group tour, in a lavish restaurant we were treated to amazing mounds of lamb couscous. A group from Texas (which I believe is part of the U.S.?) would not even try it as their consensus opinion was "all lamb is greasy and smells bad."- that meal was one of the best and most memorable that I have ever eaten. With such closed mindedness and provincialism, culinary and otherwise, that is prevalent in much of the U.S., little wonder then that lamb is so little regarded. It is the loss of the U.S. and the saving of many a lamb.
One of the superb dishes of the world is Hunan Lamb.
