I wonder if quinoa would have similar issues? I know it's an excellent, high protein alternative to rice that we really enjoy smile

gourmet tree bark? hmmmm lol I wonder what would be found in that though? wink

Dear Sandra -

We don't really eat gluten and we don't eat rice either. So it's a way of looking at things.

Start each meal with a salad and enjoy that. Then have your protein and veggies. There's really no need for "filler" to go with it. If I have a nice chicken breast with delicious mixed veggies on the side, after a salad, that more than fills me up and is delicious.

Is it that you use the rice as some sort of a bulking base?

Thank you for the meal suggestions. I think I ate rice more because I was used to pasta and bread. When I became gluten intolerant I just started looking for alternatives to the pasta and bread instead of eating a more diverse diet. I do eat vegetables but I will now increase and diversify those veggies and reduce the carbs.

Apparently it's something about rice's specific design that has it drawing arsenic up from the soil. The reports I'm reading say that wheat and quinoa don't draw arsenic up in the same way.

Yup more veggies is a great solution! You can try mashed cauliflower if you want a "sauce holder" smile.

It's funny how arsenic in rice was a big deal for a while - and it seems that many have gone back to eating rice again and don't worry about arsenic any more. Is it just the way the human mind works?
