In Rome, they call this pasta recipe "Spaghetti Cacio e Pepe". Try it out this week end with your friends and family. It's quick and very tatsy:

How simple, and it sounds delicious! I would enjoy mine with a little pinot grigio.

And you are so right, Cinzia. No need for oil in the pasta cooking water! I salt the water but that is it. I just keep a nice boil going.
