I usually make my own cold potato salad, as I do not like the taste of store bought. Now and then a smaller market may make homemade potato salad fresh without a chemical taste, too much vinegar, or too much liquid. But often the potato salad is bland and I have to bump up the flavors a bit. All in all I prefer my own, or that of a few family members who know how to make a potato salad I like.
I like the red skinned or yukon gold potatoes as well, with some chopped onion, celery, dill pickle, and hardboiled eggs. I add salt and pepper, parsley, dill, mayo, and some of that Claussen dill pickle juice (I love that too, Connie!). I prefer a nice chunky salad not dripping in mayo and vinegar.....just enough to hold everything together.
