I wanted to have a salad today, but all the lettuce at the market looked particularly gross, so we had zucchini roasted instead smile. My favorite salads though are mixed baby greens, carrots, tomatoes, cucumber, sometimes olives, a tiny bit of soy cheese, and a sprinkling of sunflower seeds or chopped walnuts with poppyseed dressing. Now I'm hungry lol.

Do you make your own dressing?

We are on Atkins in an attempt to drop some much needed weight. Our daily salads are either blue cheese wedges or mixed greens with taco meat.

Lisa, I haven't been eating salads lately. We've been having cooked collard, mustard, and turnip greens. They are so yummy!

My standard dressing is just olive oil and balsamic. Can anyone recommend something else healthy to add to change things up a bit

I make maple syrup from two big maples in my yard. Last winter I overcooked a batch and it almost turned to maple sugar. So I put a spoonful of that thick grainy syrup into a batch of olive oil and balsamic dressing, and that little bit of maple flavor makes a delicious difference. I figure that the calories in a few drops of syrup in every bowlful of salad is almost negligible.
