This week I'll post a new side dish that is a taste of summer. Crunchy and tangy, this classic low-carb salad pairs well with heavier sandwiches. Crisp and tangy on a hot summer day, try this with a BLT. Make sure that you use homegrown tomatoes on the BLT. Mmmmmm!

Our neighbor blessed us with some large tomatoes and some cherry tomatoes. They have been heavenly. I used a couple to make corn-bean salad today. It has been lovely.
We use it to dip chips. It's a quick way to dress up a plain lettuce salad. Just ladle half a cup of the corn-bean stuff onto the lettuce. Then, add dressing.

Yummy recipe Connie -- there is a similar Indian version where we add yogurt & fresh dill but I'm going to try your recipe for lunch tomorrow in a wrap with some grilled chicken :-)

That sounds great Sadhana. I also have a yogurt and cucumber salad/dressing that I use for falafel and Indian food. It's not the classic yogurt, onion, cucumber, and dill. There are a few more ingredients. Falafel Sauces Recipes
