What is everyone doing on this fine day?

It is hot and very humid where I am in the Northeast, and it is my first day off from work since Monday. I am going to enjoy a low-key day in the cool indoors. I've already got my outside chores done early, before the oppressive heat will really set in, and I plan to do a few indoor chores. I'll be back later to sit on the front porch swing when it cools down a bit.

It has been very hot here, but dry, so I can take the heat better than if I was in humid weather. Plus, we have cool breezes in the evenings and it is so nice sitting out on the porch.

I am going to bake another apple pie tomorrow and give it to my daughter and her family. I love to bake but not eat pies and pastries that much anymore.

With the left over pie dough (I always make extra), I will make and freeze some pasties for myself. I brown half a pound each of hamburger and good sausage and break it up real fine. Peel and shred one potato, one apple, one onion and mix all that with the meat. I place about 2 or 3 tablespoons of the mixture on a pastry round, fold in half and pinch edges, wrap in foil and freeze.

I unwrap the pastie and bake in 425 oven till very hot and pastry is golden brown.

These are so good for a quick lunch or even breakfast or with soup at supper. I make a dipping sauce of mayo and mustard. mmmmm .... mmmm.... MMMM!

The humidity here has been bad enough to where it is not even pleasant to sit outside at night. And the bugs really come out in the humid heat too. I look forward to the cooler, drier autumn temperatures. I haven't liked summer weather in the northeast in years.
