This sounds scrumptious, Connie! I love squash and I love sandwiches, so this is a fine recipe for me to add to my box.

Have you ever tried a portabella burger? I just do it simple, saute in garlic butter, add parmesan and pepper as it is put on the bread and enjoy the wonderful flavor. If you have a scrumptious recipe for a portabella sandwich, I would love to add that to my box also. smile

I see you listed Oatnut bread as a good choice. This is my favorite bread for sandwiches and I bet it is very good with your Summer Squash Burger. smile

Thanks Phyllis. I will think about the portabella sandwiches. At the Midwestern Editors' mini-conference, we had baby bella mushrooms cooked in Italian tomato sauce to put on our meatball sandwiches. Ymmmmm!

There was a cooked Summer Squash Burger left over from last night, so we microwaved it for lunch today. The burger was great that way, too! I also had one that was not cooked, so I fried it up today. It was fine. So, they really are keepers!

Thank you so much Connie. It sounds wonderful. As I mentioned on the phone my zucchini plants died this year. Your aluminum foil idea sounds like it will work great. I'll get over to the farmer's market and buy some squash or wait until some shows up on my doorstep smile Yesterday I found four boxes of girl scout cookies - cute. I can't wait to try your recipe!

Connie......This sounds like a lovely burger. I don't buy yogurt because I don't care for it. Can I leave it out and still get good results?

Do you have cottage cheese? If so, then buzz it up and use it. Cream cheese would work. Also, if none of these are available, you may use milk or a nut milk. You just need enough liquid to bind the whole thing together.

It is a lovely burger, and so versatile.

I had to laugh smile I don't care for cottage or cream cheese. I am so weird about white stuff.....LOL!
