Sadhana, years ago one of the women who owned an Indian restaurant with her husband offered cooking classes. My husband and I took the class together. We love Indian food.

Today, I had an extra bag of coleslaw, some frozen peas, and some tiny potatoes from the garden. I chopped onion, then, grated ginger and garlic into some oil. After that cooked a bit, I threw a few spices in the oil with the onion, ginger and garlic, and stirred to release the oils. Then, I added the water, cabbage, peas, potatoes, and spicy tomatoes. I saw a yellow squash and some cilantro and threw that in too. Yum, yum, and I used a bunch of food from the fridge!

What great ideas Connie, thanks for sharing & posting! I make a similar stir-fry type of dish, I throw the leftovers into a wrap, quesadilla, burrito or pita pocket the next day for lunch! If I have a lot of leftovers, I use the stir fry as a filling for egg roll wrappers & fry some yummy "Indianized" egg rolls. They are tasty, great for a quick fix & faster than making samosas from scratch :-)
