As I was posting articles today, I saw that my first article on the Sandwiches site posted on 5/14/2011. What a year it has been!

Congratulations Connie! If ok with you, in honor of your one year anniversary, in the near future I would like to write for the Mexico site a "torta" article dedicated to you. Yesterday, I made a sandwich, er, I mean a torta for the first time that consisted of sliced, first boiled new potatoes then lightly fried, kind of scrambled eggs, queso asadero and rajas of jalapenos on teleras- I pre-made them, wrapped them up in foil and baked them for a few minutes. What is the Spanish equivalent of "wicked good" and "unbelievably filling"?

Thanks to you the Connitas Torta article did so well on Stumbleupon (it would take about 300 birds articles submitted there to reach that total LOL) that I am thinking about doing another one in your honor, probably a spicy egg dipped fried fish torta with a chipotle, lime and green onion mayonnaise.

Off topic a bit, but what do you think of making sandwiches out of fried or baked polenta as the "bread" if it can be made not greasy?

I think that it would be a good knife and fork sandwich.
