You are welcome, Debbie. It is really easy to fix and very tasty. It can be spiced up with chopped jalapenos, just a little, mixed in with the corn pone batter. Or, just drizzle some juice from the jalapenos in the batter when mixing.

Tomorrow will be a huge family gathering day at my brother's home in honor of Mother's Day. I am going to fix the Hamburger-Chili Corn Pone Pie. I think it will go well with the bbq hambergers hamburgers and hot dogs, plus the cold salads.

My mom fixed something that she called corn pone. It's also called hot water corn bread. It is made with corn meal, a little flour, salt and hot water. If you don't have any flour, you can use all corn meal.

These are approximate measurements, since I just pour these foods together and stir! Combine 1/3 cup corn meal, 1 tablespoon flour, salt to taste, and enough hot water to make a batter that is thicker than pancakes but thinner than muffins. Stir to just mix. Pour pancake sized dollops of the batter into a heated, greased iron skillet. Flatten them with the back of a spoon. Cook until the top starts looking dry and the bottom is browned. Flip and finish cooking to a golden brown. These are great with either beans or greens.
