As a vegetarian I am always on the look out for recipes and this one sounds delicious. The nutritional information is very useful.

I don't really eat much bread but I would put the mixture into a 'wrap' a flat bread, and add piles of lettuce and sprinkle on some seeds.

My dad loves it Connie, and he's originallhy from India. I need to make sure I don't cook it for him the English way (ie mushy), but he adores it lightly cooked with spices.

Asha, if you want to throw some traditional Indian blended spices, commonly called curry, into the mix, I think that it would work out. I would also add just a touch of mint to it.

In fact, I think that I'll do that tomorrow with the rest of it. I had some truly disappointing Persian food today at a buffet, so maybe a few extra spices in the salad would work well for me.

Even my kids liked this recipe. It is so easy to make!
