I have a friend who is looking for a recipe for a German ginger cookie that his grandmother used to make. He said that it is somewhat like a gingerbread cookie but it is actually hard, not soft, and shaped like rectangles. He found a similar cookie in a bakery but it was very soft and covered with a thin white icing which is not the way his grandmother made it.

He said it was called Lebkuchen?

I'm sure Francine (German Editor) will add in also.

Lebkuchen is actually soft gingerbread with nuts & molasses/honey. These are big holiday items in the Bavarian Christmas markets.

Pfeffern�sse (Pepper Nuts) are somewhat similar, but crispy hard, & the recipe my mother uses every year yields in small (3/4 inch by 3/4 inch) squarish cookie laden with the spice anise. This is a family favorote.

Not sure if this what your friend means Lori but was going to post the recipe next week as it makes a great Hexen Haus, �Ginger Bread House'. We always used to make ours then as it was the �holiday lull� and normally the time my sons and their friends began looking for �something to do�, and building with something other than Lego, which could also cause chaos and mess, seemed like a good idea. smile

It is a super, and easy, recipe for the harder variety of Lebkuchen which are just delicious on their own, or dipped into a warm wintery type of drink, Brandy hot chocolate for example.....oh Yum.

I have never made a ginger bread house and love the one you have in your post.

Is there a certain amount of time that it has to be eaten or can it be preserved and last forever?

Reason for asking:
Seems too beautiful to eat...

Yes Angela it is easy to preserve them. We have often done it for the same reason as you mention..........it was considered too nice to eat, and no one wanted to be the one that 'broke' it. smile

A Witches Cottage will last just about indefinitely, does tend to get a bit dusty though, and will just continue to dry out. In fact I think if you tried to eat it after a few months you would probably break your teeth. mad

Any chance your mother would share her Pfeffernuesse, Pepper Nut, recipe Beetle? Or perhaps it is a family secret. Sounds great and I don't have a good recipe with anise, even though it is a favorite spice.

Would love to try one out. Christmas is finally over tomorrow, Twelfth Night, so that would give lots of time to experiment before it hoves into view again with Advent in November.
