Anyone ever try a cold baked potato sandwich?

Peel and slice potato, spread choice of bread with mayo, salt (not too much) and pepper, a little thyme, place potato slices and thinly sliced onion.

It is so good - and a great way to use up leftover baked potatoes.

I would have never thought - but I do love cold baked potatoes.

Thanks Phyllis, I'll have to try this. I might also add a dab of mustard.
