Greetings from soggy Kansas!
One of my friends was blessed with cases of fresh vegetables to give to his congregation. When they had taken all that they needed, he started passing out vegetables at work. The Reverend Mr. H. gifted me with eggplant and zucchini!
I had promised some readers that I would make some vegetable sandwiches. This looked like a sign for me to get busy! Tonight my family feasted on different variations of a Roasted Vegetable Italian Sub.
The beauty of using vegetables as the main ingredient of these Italian subs is that they can be tailored to suit individual tastes. Vegetarians and vegans can enjoy these sandwiches. A meat eater can find satisfaction, too. Just add a bit of sausage, and say, �Buon appetito!�
We're saving the rest of those roasted vegetables to make low-carb sandwiches. Look for that article in the very near future!
