I've got a busy day planned, and breakfast is important today. So, I whipped up a warm breakfast sandwich to get a good start. The base was a deli white bread (not healthy, but tasty) with mayo, yellow mustard, and a fried egg sprinkled with shredded cojack cheese. A double layer of butter lettuce added freshness. To fry the egg in an iron skillet, I just wiped a skim of oil across the pan with a paper towel. Seasonings were sea salt and freshly ground pepper.

I love hot sandwiches, and warm breakfast sandwiches are terrific. Unfortunately, my health dictates that I make major changes in my diet, and my former favs are off-limits.

But, in the past, I loved to make hot pita sandwiches. A friend of mine used to spread cream cheese and cottage cheese in a pita and put it in a toaster oven. Delicious!

I also liked to make bacon, cream cheese and jalapeno pepper jelly on toast.

Of course, anything wrapped in a tortilla was good to go! smile

I also make this breakfast loaf egg bread and fold in cubes of cheese and cooked whole breakfast sausage. After baking, the bread is sliced thick and has cheese and sausage already in it! You can toast it and butter it.

I love bagel sandwiches as well.

Sadly, I must stay off the carbs because of my diabetes and blood sugar (out of control still!) frown

Can you come up with some low-carb sandwich ideas? That would be so great!

Of course I can come up with low-carb sandwiches! What flavors do you prefer? You might look in our Healthy Ideas section. We do have a low-carb article. Some of the ideas might have more fat than you want. There's also next week's feature, crunchy chicken salad.

Just let me know what flavors you like, and also say what you never, ever want to eat. I'll get right on it.

Yummmy! Sandwiches?! Do you have any new ideas for veggies, cheeses and fish/white meat? Nearly all of the stuff Lori listed up there, sound so delicious!!

I do have an upcoming yummy cheese sandwich scheduled. I'll do both the high-carb and low-carb versions. Do you like spicy sandwiches?

I also have a veggie sandwich coming up soon. Again, I'll do high-carb and low-carb versions. There will also be a vegan option.

Do you like dill and onion? I have a great idea for a dill flavored fish sandwich. Did you want cheese on that?

This week I will be doing some tasty roasted veggie sandwiches with an Italian twist. There will be low-carb and high-carb versions.

High carb please! I work to keep the weight on! Love spicy, love dill, love onion and yes! oh I adore cheese! For me, everything tastes better wrapped in pita bread! yums! Thanks Connie! *hugs*
