What is a really simple meal to make for dinner? What's your favorite thing to cook that you can produce without thinking?

I just made last night an easy recipe. It's called Apple Curry. You brown pork chops with a little bit of oil and salt and pepper in a skillet then put them in a square baking pan, turn the oven on to 400. To the skillet you just used, put a scoop of butter add onions and apple slices, cook until caramelized, then add apple juice, applesauce, chicken bouillon granules, garlic and curry powder found in the spice section of the grocery store. Once that is all heated add the mixture over the pork chops and bake for 40 minutes or until the pork chops are done. Thinner pork chops cook faster so it could be done in 15-20 minutes.

4- 1 inch thick boneless pork chops
vegetable or olive oil
salt and pepper
1 large onion sliced or diced
1 large apple cored and sliced or diced(I peel mine)
1 1/2 cups unsweetened applesauce
2 cups apple juice
1/4 cup butter
2 tablespoons chicken bouillon granules
1 clove garlic
3 tablespoons ground curry powder

Prep time 10 minutes.

It is not spicy like normal curry, it's sweet. I juice my own apples and make my own applesauce but I have made it with store bought products and it taste good. I also make my own french fries as well but you can buy them also.

When done put some french fries on a plate and either put the apple curry over the fries or on the side.

You can also add some mandarin oranges on top before baking, it is really good that way too.

Omelets! Mushroom and spinach omelet is my fav. smile

And salads of all kinds. Grapefruit, avocado and red onion salad. Slice everything thinly and arrange prettily on a plate. So refreshing!

I can also whip up soups really quickly using canned broths. Steamed or microwaved veggies like broccoli, butternut squash, carrots, etc. can be pureed and thinned with broth. Or scramble an egg and drizzle into hot chicken broth for egg drop soup. Add any thinly sliced veggies that will cook quickly. Miso soup is fast and easy to make, too.

Another quick soup is my son's fav, Tortellini Soup. I brown some Italian sasauge and add chicken broth. Add some fresh or frozen spinach and fresh tortellinis. Sprinkle with Parmesan cheese. Cooks in under 15 minutes.

Oh, Lori you will have to give me the recipe for the egg drop soup, I love soups and I make an amazing potatoe soup but right off the top of my head I'm not sure of the amount of stuff I add, I always just eye measure it.

i like a woman that can cook, im not keen on avocado or butternut squash ugh , the soups sound great. i bet you get a good meal at your home lori, and yours karen.

Tina, my family loves macaroni and cheese. I buy the good brand which is not too expensive yet better than others. I add some shredded cheese to it and the cooked, diced ham I find in the meat section. With a green vegetable and garlic bread it makes a very quick and simple supper that everyone loves.

I also use that diced ham in my bean soups. A good bean soup served with warm french bread and butter is a filling and warming supper.

I love making soups and stews. I start them in the morning and let them simmer all day. They are ready after a few hours and whenever someone is hungry I send them to the kitchen and the soup pot.

There is something about feeding a man that I just love. I love feeding children and animals, too. I keep a small bag of bird seed in my purse to feed birds.

I will happily spend the entire day cooking my husband's favorite foods. But I can whip up a quick meal to serve guests in under 20 minutes! Take that, Rachel Ray! LOL. smile

Oh, that egg drop soup is the easiest:

chicken broth
eggs

Those are the basic ingredients!

Heat the chicken broth until it's simmering or lightly boiling. Scramble the egg(s) and slowly drizzle it into the hot broth, stirring the entire time. The egg thickens the broth.

Here are the optional ingredients to add:

soy sauce
toasted sesame seed oil
snow peas or peas
carrots, thinly sliced
bamboo shoots, thinly sliced
water chestnuts, thinly sliced
ground pork or shrimp
green onions, chopped

You can add whatever you like. Add the soy sauce and sesame oil to taste.

But egg drop soup can be as simple as only egg and chicken broth.
