Salads are delicious. Some lettuce, spinach, tomatoes, carrots, radishes, and other vegetables make great side dishes and even entrees. Add a few herbs and the flavor can be enhanced. Here are a few herbs that you can add to your salads to give it more color and flavor.

its a great article you wrote rebecca, i have to admit you know your herbs, the ones i like are the thistle and the clover, i often make infusions with them with dandelions, nettles and honeysuckle in lemonade. i also like water cress on my salads they have as you will know phytochemicals in that fight against tumours, milk thistle is one of the best like, i cant see anyone ailing with anything if they follow your salad advice -well wrote. lawrence

Thanks Rebecca I now have another herb in my garden I didn't know I could eat. I have evening primrose growing everywhere, I will try that and see what it taste like this year.

I have only ever used the oil bought from a shop, I wonder if you can eat the pretty yellow flowers of the evening primrose like nasturtium?

I just had a fabulous herb and spring green mix salad that was packed with fresh herbs that typically I use only for seasoning. So it was a surprise to eat so many fresh herbs in quantity, like the dill. I thought it would be overpowering but it was delicious and super flavorful.

I'm going to try to make salads with the herbs you suggested. It's time to break out of the old salad box!

linda why dont you make infusions of herbs and flowers? boil them in lemonade for a couple of minutes then let them cool, i think its better than pouring boiling water over them, you can make some really healthy drinks. lawrence
