I recently watched a video recipe on You Tube.

The lady used a tool to pierce the skin on a piece of pork belly.

It looked like the old wooden "mushroom" used to darn the heels of

woollen socks but with tightly packed spikes coming out of the

end.

Any ideas where I can get one?

I remember my grandmother darning socks with a 'mushroom' and my grandfather had a larger version that he used to 'squash' the water out of greens with. We called it the squasher.

As I love a mission, I have Googled all kinds of things to try and find you one for pricking skin, but I didn't find a single thing that resembled or was used for what you need.

Its best to owned a thick, cross grained laminated hardwood meat board for Chinese cooking.

I think you can use rail brush to pierce the skin of pork, or use pins.
