For Thanksgiving I make a squash bisque with a roasted red pepper garnish that is excellent on sandwiches!

It is so easy -- put a jar of drained roasted red peppers, a Tbsp of olive oil and some dried chives in your food processor. Don't over process -- leave it slightly chunky.

It tastes great with leftover turkey! (With the Muenster cheese from the asparagus au gratin I also make every year!)

That sounds good - and easy!

I usually roast my own peppers, skin, slice into strips and mix with olive oil and fresh garlic. Yum!

It makes a great side dish either by itself or added to sandwiches, etc.

I sometimes use the jarred roasted peppers but they are SO expensive and don't taste as good as roasting at home.

One of my favorite sandwiches has roasted peppers, eggplant, onions, and yellow squash. I toss them in olive oil with balsamic vinegar (to taste) and sprinkle with sea salt. Then, roast away!

I use a warmed ciabatta roll with a lovely marinara sauce for a hearty vegan sandwich. Melted provolone is fantastic if it is not a vegan sandwich.
