Water 50 ml
Sugar syrup 50 ml
Fresh or frozen cranberries and strawberries 50 gm
Prosecco wine 60 ml
Fresh lime juice 30 ml
Cointreau or other orange liqueur 2 tbsp
How to prepare
Cook the berries with the sugar syrup and water on a slow flame, uncovered, until they collapse. This should take about 8-10 min.
Pour through a large sieve into a bowl, gently pressing on solids to extract liquid (without forcing pulp through), and discard solids.
Cool syrup, then chill, covered, until cold.
Stir in prosecco, lime juice, cointreau. Transfer to an airtight container and put in freezer to harden .
Blend the mix before you serve it.
