For some unknown reason, our bell peppers never produce until after August. I love using them in sauces and stir-frys, but don't care for them raw, as my husband. When I have plenty, I cut them in small pieces and place in a small container with water filled to the top. I freeze the containers, then remove the bell pepper ice chunks to store together in a large freezer bag. When I'm making a sauce, I use 1 chunk, water and all. The pepper pieces aren't firm and crisp, but they get soft when cooked anyway. The water they were frozen in has a good bit of flavor, so it's not wasted. I still have 3 or 4 pepper ice chunks from last fall and hoping my plants will get to blooming soon.

unfortunately peppers in mass quantities do not like me, especially reds. =/

lcp, that is a great idea you have with the pepper ice chunks. I will have to try that.
Wendy, what about the yellow wax peppers? Do they bother you?

I am with Ang, not going there. While my eyes do not burn, peppers have a special vendetta for my GI tract.

Bell Peppers are not hot or spicy. The sweet reds are wonderful. Now the jalapenos and chiles are a different matter.

I am not a hot and spicy person so I just avoid them all....unless I am making General Tso's Chicken. YUM.
