I planted an eggplant in my strawberry jar. I decided to do something different with the strawberries. Have you ever grown an eggplant in a container? I hope it does well. The jar is a fairly decent size.

I read that eggplant is suitable for growing in large tubs or containers as it is a bush, rather than a sprawling vine. The article suggested to grow it in loamy soil without too much fertilizer. It even said that container growing would reduce soil borne diseases.

So...good luck! I want to grow a variety of Japanese eggplant this year because I like this one mustard pickle recipe. But you inspired me to plant regular eggplant because I do love to eat Italian caponata and eggplant parmesan...roasted eggplant dip...hmmm. I don't know if I can wait until they grow!

I like some eggplant = one plant will do me if it will produce. I'm excited about the prospect. My deck is looking good.

My eggplant is about 4 inches long. Yippee!

I've got a second eggplant.

I ate my first home grown eggplant tonight. It was Delicious. I sliced it up thin, breaded it in crumbs, fried it in olive oil, and I am so happy. I have another one that will soon be ready to pick. I hope I get a few more. YIPPEE!!!!

Oh I love eggplant parmesan...hubby planted eggplant for me one year and didn't share my enthusiasm! He hasn't planted any since lol!
