Good article and lots of great info, Moss! I think eating more veggies is partly habit. Once you get used to adding them to your meals or using veggies as a snack it gets easier.
I'm in an organic fruit and veggie coop so I get a bin full of these twice a month. Every night at dinner, I go through my store of veggies to see what I can fix.
I also add greens like spinach to our morning smoothies too, to get more veggies into our diet.
