You can freeze any cookie dough. To prep them, simply make a log of dough on a sheet of waxed paper or plastic wrap. Roll it up in the paper and shape it into a log by rolling it back and forth on the counter. Twist the ends of paper. Freeze.
To use, take it out to thaw in the refrigerator and slice into rounds while still a bit firm. Bake as usual.
Sugar cookie dough, chocolate chip cookie dough and shortbread doughs work great this way.
