Do any Hispanic or Latino holidays celebrated in the U.S. or Latin America involve the drinking of champagne?

I am not aware of any traditional/Historical holidays celebrated by drinking Champagne (Most traditional drinks tend to be regional such as Atole, sangria, and rompope.) That is not to say that Hispanics do not drink champaigne to celebrate new years, Quinceaneras and the like. Perhaps an article on traditional Hispanic holiday drinks would be a good addition to the site? What do you guys think?
