Thank you for the article. I have stir fried for a long time but I tend to make things up as I go along. I'll be reading some of the other articles you mentioned. Maybe I can be more of a 'pro.'
My stir fry pan is actually my favorite pan for almost cooking anything. It is a Pampered Chef stir fry pan. I use it for scrambled eggs and ground beef for sloppy joes too.
Actually making it up as you go is what I think most people (even pros) do when they stir fry. Plus that's how, many times, I end up discovering new combinations of ingredients. So in my opinion - you already are a pro.
