I'm not a vegetarian, but I've recently discovered Quinoa - and have completely fallen in love with it!

I've actually had a gastric bypass, so need a high protein meal - and many times vegetarian meals are weak in this department.

But menu #1 sounds both delicious AND like it would provide enough protein!

I'm trying Quinoa today. Always trying to up protein without pushing the carbs too high. How much protein per serving?

Jason, you are doing a great job!

Thanks for the input and encouragement Marilyn.

And btw as far as the protein count you're looking at around 5.57g, according to whfoods.org, per 1/4 cup [serv.] or appr. 21g per cup of quinoa.

Hope that's helpful. smile
