When I was a girl gelatin was touted as a nutrient that could make your fingernails stronger and hair shiny---how much truth is there to that? When I roast a chicken I save the broth and chill it, and take all the fat off the top leaving the naturally jellied aspic. I LOVE it! It not only tastes good, it makes me feel great! I am assuming it has something to do with the proteins in the natural gealtin--which I am assuming forms because I cooked the bird with the bones (isn't gelatin from bone marrow?) So why does this make me feel so good and nurished? Any ideas? And can I get it from an envelope of Knox gelatin too--or is that a different (artificial) thing?
