I know what you mean about trying to stay completely away from gluten. It's everywhere! I also avoid night shades, eggs, and anything too herby or vinegary. When I eat at a friends house, they all know, and bend over backwards to be accommodating, but I always feel so badly that I'm putting them through the trouble. Sometimes I bring my own food, so they won't need to worry about it. I don't have celiac myself, but my acupuncturist feels that anyone with stomach problems should steer clear of gluten products. I find there are really good rice pastas available, but how right you are about the cost. It really can be expensive to eat right! We don't have Donatos Pizza here in Vermont that I know of, but how great you have that as an option! Perhaps you could get coworkers to go there when there is a lunch planned!  Shay

My mother just found out she has celiac - and she has been type 2 diabetic for over 15 years now.
She had been extremely sick for the past 5-6 months. She actually started getting really ill when the big scare about tomatoes started, and that is what all the doctors thought it was, food poisoning from tomatoes.
But she was on 4 different (and strengthening) antibiotics and nothing was happening. Then they started doing tons of tests. She found out she is lactose intolerant (she loves milk) and then they finally found the celiac.
She called me in absolute tears. I was shocked.
They were ruling out things like cancer, so when she said celiac i was like "good - this is something we can manage". She is hysterical, however. All she keeps talking about is what she cannot eat. (no wheat, no sugar, no milk) because of the celiac, diabetes, and lactose problems.
My answer to her is - let's eat natural for at least 2 weeks. Fresh fruit, veggies, meat. She can have rice. Water to drink. i think if I can get her to eat for just two weeks this way, with no preservatives, she is going to feel so much better, she won't freak out so much.
I know she is giving up a lot, but compared to cancer - I can't help but think this is good news.

Michelle, I'm really sorry about your mom's new found conditions, and how upset she is. It is horribly upsetting to be told you must give up foods that you love, and that you have always eaten.  But I absolutely agree with you, that the good news is that she does not have cancer, and with some diet changes, she will be okay! I love your approach, too. Eating natural and organic foods for two weeks will make a huge difference. Her body will become detoxified, especially with large amounts of filtered water, and she will start feeling much better.  I drink only water, no juices, and feel just fine. She might miss her wheat products the most, but there are some lovely rice alternatives to pasta. I also try and stay away from wheat as much as I can, but have found that Tinkyada brand pastas are a great alternative - they are more firm than other brands that I've tried. And believe it or not, spaghetti squash actually is wonderful as spaghetti - I've even made lasagna with it. For cooking, whole Quinoa, and Quinoa flours are wonderful. She can also have buckwheat flour and corn products. Organic Valley makes a lactose free milk, and a company called Lifetime makes lactose free cheese! The Silk brand soy milks are very good, too. I'm still trying to find soy cheese that is yummy - do let me know if you are able to find one! Here is a recipe for tahini pasta with chickpeas that I'd like to try. Yes, she is! And, caterer that she is, she is starting to enjoy (somewhat) finding the alternative ways to cook stuff. The fact that my dad just had a gastric bypass is helping a lot, because he needs to be low-carb, so cutting wheat products out of their house helps both of them.
It is just that they both grew up eating and cooking down here in Georgia, and have almost 60 years worth of habits to get over. Mom is in mourning over her loss of milk products more than anything. She has always been a big milk drinker.
She just gets really frustrated with food labels. Because she is usually running so much, she hates to take the time to check every label. Once she gets into the groove of what she can buy, I think she will find it a lot easier.
And as someone who had a gastric bypass partially because of the fact that I am a carb addict and needed something to help break that addiction every bit as much as a smoker needs the patch - I understand how 1 cookie can completely set you back.
An alcoholic can give up alcohol and stay away from bars, a food addict must keep eating, but control it. It's hard.
