Father's Day is coming up, and my dad (like many) has a bit of a sweet tooth.

Do you have something special you make just for Dad?

Right now I've got a craving for mini cheesecakes topped with fruit. I have sugar-free graham crackers and many types of frozen fruit. I *had* a recipe, but I don't know what I did with it.

Off to search the Internet!

Actually, my dad jut had the gastric bypass surgery like I did, so I'll be fising a no-sugar dessert that was really easy for me suring this phase:

Sugar free choc pudding mix
2 Cups cold milk
1 Tbsp espresso powder
1 container whipped cream cheese
1/2 container sugar free Kool whip

It tasted like a combination mousse/cheesecake filling - and very hard to tell it's sugar-free.Plus it is very soothing on the tummy.

if you want a easy and yummy cheesecake recipe, here's one... but it's certainly not low sugar

2 8oz bars of cream cheese, softened
2 eggs
1 3/4 tsp vanilla
1 cup sugar
1 pt sour cream
graham cracker crust

Preheat oven to 350
Prepare your graham cracker crust in a spring form pan - if you are making it from scratch (graham cracker crumbs, sugar and butter/margarine- recipe is on the box)

Combine cream cheese, eggs, 1/2 cup sugar and 3/4 tsp vanilla and beat until smooth. Pour into prepared crust. Bake at 350 for 20 minutes. Let cool.

Preheat oven to 475.
Combine the sour cream, 1/2 cup sugar and 1 tsp vanilla and beat until mixed well. Pour over cooled cake. Bake at 475 for 10-15 minutes. Keep an eye on it and watch the top.

hey Trish. the creamcheese.com site has a cheesecake recipe planner that lets u make or own personalized cheesecake. if u know some flavors ur dad likes already, maybe u could make him an awesome cheesecake from this site.
