May is always the beginning of crawdad season here in the deep South--crawfish boils abound and everyone's finger tips are stained a rosy pink and are sore from the peeling and all the hot spice.
Leftover tails are always in the freezer. I like to make etoufee.
What are your fav crawfish dishes?

When I lived in Mississippi, I always just loved eating them straight, and dipped in garlic/butter sauce. Except my (now ex) husband always had to peel them for me - because them looking at me always creeped me out, LOL! crazy

I'm sure I'm a disgrace to my Louisiana in-laws. The first Christmas they were excited to take me out to restaurants for crawfish. Eh, not so much for me.

To answer your question though, DH like etouffee the best.

I like them pretty much the same way as Michelle. I could peel them but still there are pretty freaky looking! eek

They just look like tiny lobsters to me! But easier to crack open--LOL
For those of you who don't like to look at their beady little eyes, there's always the battered and deep-fried tails that every good Cajun or Creole restaurant has on hand.
Gator is great served that way too--sure wouldn't wanna try to clean one, though. EEK!

We went to a Cajun Festival yesterday afternoon. I have been craving boiled mudbugs for months. I hate to say it but I was very disappointed. The amount of 'heat' was about right for the crowd but the poor little guys were so overcooked and dry. Guess I'll just have to have the family over and do our own boil.

My favorite way of enjoying crawfish? Everyway! Although I do love little individual Crawfish Pies!

Cajun steamed with Old Bay all over them...Best snack EVER.

I love crawfish too- I have several recipes that utilizes it well. I make; * Seafood Alfredo with crawfish * Sauteed scampi style over rice * Crawfish in a heavy cream sauce I love it but it is hard to find in my neck of the woods.
