LOL! Sorry for the delayed reply.. had to get through a busy day at work, and our seder. We just polished off the last of our leftovers tonight (we only do the first night). It does seem like a vegetarian seder, but we are not vegetarians. Actually, our first seder 7 years ago grew out of us wanting to try a great brisket recipe and had only that, and a noodle kugel (which we were too dumb to realize wasn't unleavened for passover!) and latkes, which are really more for hanukkah. It has grown over time to the menu we have now, and so many of our friends are vegetarians, and now vegans that the menu has grown to accomodate them!

We actually do a vegan matzoh ball in veggie broth to also go along with our egg-based regular matzoh ball soup in chicken broth.

Almost all of our recipes actually are from koshercooking.com, and all of them get raves every year. I am really not a cook, so I am happy just not to mess them up...

Thanks for sharing these~ the spinach casserole sounds yummy!!

There is a great (and simple) brisket recipe in Kosher by Design.
You pour brown sugar, sauerkraut and canned tomatoes over the brisket and that's it. It's quite easy and foolproof for the person who doesn't eat (or want to touch) the brisket.
