This past weekend my dad and sister Denise came in for dinner and I made this really delicious and somewhat healthy brushetta. I combined freshly roasted red peppers (which are high in vitamin C) with fresh crumbled feta and tossed it with some olive oil, salt and pepper then served them on whole wheat crostini. Great easy app!

I have a great recipe for chicken Bruchetta. I saute the chicken with red peppers and onion in a garlic butter. In a large bowl I combine stove top stuffing, a can of diced tomatoes, pepper, garlic powder and add enough hot water to moisten. I arrange the chicken in a buttered lasagne pan, sprinkle grated parmesan and mozzarella over the chicken then cover it with the stuffing mix and bake till hot thru. Then I sprinkle with Parmesan just before serving. It is sooooo good!

That sounds so good! I love red peppers and feta cheese.

One of my stand-by appetizers/snacks is roasted red peppers with fresh garlic and a little olive oil.

It it quick to make and stays fresh in the fridge for days and is a great side dish for any meal (or addition to sandwich).

I use olive oil a lot - it is good for us and adds a delightful flavor to cooking. When I saute I use half Imperial marg and half olive oil. It really gives foods a good flavor.
