I recently received an email from Joline in Vermont where she sent the following microwave recipe. I haven't tried it yet, but thought I would post it in case some of you have a turkey breast in your freezer that you are trying to use up. I plan to try this soon when I have all of my kids over to dinner. Not only does it sound awesome, but I am already planning several dishes to prepare using up the leftovers. Thanks for the post Joline; it is much appreciated!

Any of you who do try this right away, please let the rest of us know how it turns out.

Here is Joline's email:

I would like to pass on a recipe I have been using for quite some time!!!
I buy a "hotel" turkey breast, as large as possible. Clean inside & out, and DRY well with paper towels. Moisten with oil, butter, marg, or butter spray. Season inside with salt and place in a casserole, or lg bowl with deep sides.
Season outside of turkey with salt, pepper, PAPRIKA, and whatever other spices you like.
Place in Microwave, and cook on HIGH for 65 minutes. Cover with aluminum foil, and put back in micro (for convenience) and let stand for 20 - 30 minutes while the temp rises to 170' or so.
(I forget- correct temp if I am wrong)
Prepare to cook your potatoes, stuffing, veggies, etc cook these during (or before) the waiting time.
I have never had this fail, served it to company, as well, and no one believes this came out of the microwave!!!!! Plenty of juice to make grave-- Just use a little of the fat, and all of the juice!!
I have done this for myself, and lopped off one side,put in a zipper bag while still warm and freeze for later use !!!! Awesome-TWICE!!

The recipe sounds awesome! Roasting a whole turkey often leaves a lot of parts that need to be tossed out and is such a waste. I use to make soup from the carcass and leftover meats, but it is such a mess. I am going to try the microwave recipe next time. Thanks for sharing!
