Have you ever tried it? If you love coconut shrimp you'll love coconut chicken I bet! I made this the other day as my college bound daughter asks for it when she comes home. So we had shrimp and chicken dipped in batter and coconut and fried to a crisp sweet tenderness that just called my name. Add to that the pinacolada dipping sauce and it's a perfect 10!
