That slice of cheesecake looks awfully good. I vote for that.
On a savory note, I like cream cheese and chives as a potato chip dip.

Any way I can! laugh

Having had Gastric Bypass surgery, cream cheese is almost a staple to me. For a several months after my surgery I would mix up this treat, because it was smooth, creamy, and very soothing. I just kept it in the fridge, and would dollop out a Tablespoon or two. And, I have so many diabetics in my family - they all love having a sugar-free dessert almost like cheesecake.

1 container (8 oz) whipped cream cheese
1 box sugar free instant chocolate pudding
1 Tablespoon instant espresso (or coffee)
1 1/2 Cups cold milk
1/2 container sugar-free whipped topping (like Cool-Whip)

Mix pudding mix & espresso powder with cold milk until smooth. Blend in cream cheese until well mixed. Gently fold in whipped topping. Put in frig for at least an hour, then enjoy!

I hear you on that one Sarah. Something to consider is ricotta or marscapone cheese. I seem to have less problems with it.. or even silken tofu. I have made a few cheesecakes with tofu ;0)
